Japanese Mmmmayo, Anyone?

11/04 2026

I hate mayo.

Or, I used to. I mean, thick, white, gelatinous globs of egg-based goo? Respectfully, no thanks.

But then Bachan’s had to go and ruin my perfectly good lifelong prejudice against mayonnaise by launching three righteously delicious Japanese Mayos. And now I’m reconsidering everything I thought I knew about condiments. And myself as a person.

From Barbecue to Dipping to Dripping with Umami

I’ve had the absolute pleasure of working with Bachan’s for several years now, helping bring their signature personality to life through copywriting for their Japanese Barbecue Sauces, Japanese Dipping Sauces and now their latest flavor-forward family members: Original, Spicy and Black Garlic Japanese Mayos.

And what a family it is. Made with free-range egg yolks (no whites invited), tangy rice vinegar and nothing artificial, these Japanese mayos are silky, rich and absolutely swimming in umami. They’re what happens when mayonnaise gets a passport, develops excellent taste and stops having a texture that makes me want to gag.

I got to write the flavor copy for all three flavors, along with messaging for the big launch. And naturally, each one got its own little story.

Meet the Mayo Family

ORIGINAL
Silky. Tangy. Umami for days. The signature qualities that set Japanese mayo apart from the rest. Our Original Japanese Mayo delivers bold, balanced umami in every bite. Made with free-range egg yolks, tangy rice vinegar, and nothing artificial ever, we take a really good thing and make it great. Spread it, dip it, drizzle it—just don’t call it “plain mayo.”

SPICY
Good on anything. Better on everything. The fun cousin of traditional, umami-rich Japanese mayo, our Spicy Japanese Mayo’s free-range egg yolks and rice vinegar are spiked with a kick of red jalapeño heat that builds as you go. It’s silky smooth, and just spicy enough to keep things interesting. Trust us, you’ll find excuses to use it.

BLACK GARLIC
Garlic grew up for this one. Our Black Garlic Japanese Mayo blends in aged, cured black garlic to bring subtle sweetness and deep umami flavor to a silky-smooth base of free-range egg yolks and rice vinegar. Rooted in traditional Japanese mayo’s creamy, umami glory, our Black Garlic Mayo is the delicious result of garlic outgrowing the ordinary.

A Saucy Relationship That Keeps Getting Better

One of the best parts of this launch is getting to continue my creative relationship with Bachan’s through another exciting chapter. I’ve been lucky enough to work with this wonderful team for years, both before and now following their acquisition by The Marzetti Company earlier this year.

Watching the brand grow from its Japanese Barbecue Sauce roots into an ever-expanding world of authentic Japanese-inspired condiments has been such a treat. And getting to help tell those delicious little tales along the way? Even better.

Huge thanks to the Bachan’s team for continuing to trust me with the words behind all this flavor. It’s been a joy to help bring another round of saucy goodness into the world.

And for the record, I still don’t consider myself a mayo person.

I’m a Bachan’s Japanese Mayo person.

There’s a difference.
